Buffalo Burgers

  • 1 # Ground Buffalo Meat                      
  • 2 cloves Garlic, minced
  • 1 Shallot, minced
  • 1 Tb Capers, chopped
  • 3 oz Bacon, minced
  • 2 oz Butter, softened
  • 2 tsp Whole grain mustard
  • 1 Egg yolk
  • ½ tsp Worcestershire
  • 1 tsp Parsley, chopped
  • Pinch Fresh Thyme, chopped
  • 3 oz Softened butter

 

  1. In a bowl, combine all ingredients EXCEPT Buffalo meat.
  1. Gently fold in Buffalo meat and mix carefully.
  1. Weigh 5 oz. buffalo for each patty. Divide into half. Pat each half into 3 inch disks
  1. Place ¾ oz. crumbled blue cheese in center of half the patty.
  1. Top with remaining patties, seal edges well to encase cheese.
  1. Grill to Medium, place on grilled bun
